Ingredients
- beef shank – 2 lbs / 900 g
- water – 8 cups / 1.9 L
- potatoes – 4 medium, peeled and diced
- carrots – 2 large, sliced
- onions – 1 large, chopped
- barley – 1/2 cup / 100 g
- bay leaves – 2
- salt – to taste
- black pepper – to taste
- dill – a handful, chopped
Instructions
- Place the beef shank in a large pot and cover with 8 cups of water. Bring to a boil, then reduce the heat and simmer for 1.5 hours, skimming off any foam.
- Remove the beef and let it cool slightly. Cut into bite-sized pieces.
- Add potatoes, carrots, onions, and barley to the pot. Season with salt and pepper to taste.
- Return the beef to the pot along with bay leaves and simmer for another 45 minutes, until the vegetables and barley are tender.
- Stir in the dill just before serving.
