Ingredients
- Whole catfish – 2 lb / 900 g
- Red curry paste – 3 tbsp / 45 g
- Coconut milk – 1 cup / 240 ml
- Thai basil leaves – 1 cup / 15 g
- Fish sauce – 2 tbsp / 30 ml
- Sugar – 1 tbsp / 15 g
- Vegetable oil – 1 cup / 240 ml
- Kaffir lime leaves – 4 leaves
- Red chili, sliced – 2
Instructions
- Clean the catfish thoroughly and pat dry. Cut it into large chunks.
- Heat vegetable oil in a large pan or wok over medium heat. Once hot, fry the catfish pieces until golden crispy, then remove and drain on a paper towel.
- In a separate pan, heat 2 tablespoons of oil over medium heat. Add the red curry paste and sauté until fragrant.
- Stir in coconut milk, fish sauce, and sugar, cooking gently until the sauce thickens slightly.
- Add the fried catfish into the sauce, tossing carefully to coat well.
- Tear the kaffir lime leaves and add them to the pan along with Thai basil and sliced red chili.
- Cook for another 2-3 minutes, allowing the flavors to meld.
- Serve hot with steaming jasmine rice.
