This is the traditional, time-tested version of the dish. It stays true to its origins, using well-established techniques and ingredients that define its authentic flavor. A perfect starting point for exploring its evolution.
Pinagong is a beautifully crafted bread originating from the Philippines, known for its distinct turtle-like appearance, which is how it earned its name – ‘Pinagong’ translates to ‘turtle-shaped.’ This bread features a lightly sweet, buttery interior encased in a crispy, golden crust. Its origin lies in the Luzon region, where it has been a beloved breakfast item and merienda (snack) for generations. Perfect for pairing with coffee or tea, Pinagong’s unique texture and flavor capture the heart of Filipino bread-making traditions.

Ingredients

  • all-purpose flour – 3 cups / 360 g
  • granulated sugar – 1/2 cup / 100 g
  • active dry yeast – 2 1/4 teaspoons / 7 g
  • salt – 1 teaspoon / 5 g
  • unsalted butter – 1/4 cup / 60 g, softened
  • warm milk – 1 cup / 240 ml
  • egg – 1, large

Instructions

  1. In a mixing bowl, combine the warm milk, yeast, and 1 tablespoon of sugar. Let it sit for 5 minutes until frothy.
  2. In a large bowl, whisk together the flour, remaining sugar, and salt.
  3. Add the yeast mixture, softened butter, and egg to the dry ingredients. Mix until a dough forms.
  4. Knead the dough on a floured surface for about 8-10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover, and let it rise in a warm place for about 1 hour or until doubled in size.
  6. Preheat your oven to 375°F (190°C).
  7. Punch down the dough and divide it into 6 equal pieces. Shape each piece into a round ball and place on a parchment-lined baking sheet.
  8. Use a knife to score crisscross patterns on top of each ball to mimic a turtle shell.
  9. Let the dough rise again for about 20-30 minutes.
  10. Bake in the preheated oven for 20-25 minutes or until golden brown.
