Pihtije is a traditional Serbian meat dish known for its rich flavors and unique preparation method. Often consumed during winter festivities, this dish captures the essence of Serbian culinary heritage. Pihtije is akin to savory meat jellies found in Eastern European cuisines, utilizing pork trotters, garlic, and bay leaves to create a gelatinous dish with deep, comforting flavors. Ingredients
- pork trotters – 2 lbs / 900 g
- pork hocks – 1 lb / 450 g
- garlic cloves – 5, minced
- bay leaves – 3
- black peppercorns – 1 tbsp / 7 g
- salt – 1 tbsp / 15 g
- water – 8 cups / 1.9 L
- vinegar – 2 tbsp / 30 ml
- carrot – 1, sliced
- parsley – for garnish
Instructions
- Clean the pork trotters and hocks thoroughly under running water.
- Place the meat in a large pot and cover with water. Add the bay leaves, peppercorns, and salt.
- Bring to a boil, then reduce the heat to low and simmer for 3-4 hours, skimming off any impurities that rise to the top.
- Add the garlic and carrot in the last hour of cooking.
- Once the meat is tender and the broth has reduced by a third, remove the meat and strain the broth to remove solids.
- Shred the meat, discarding bones and gristle, and place it in a deep dish.
- Pour the strained broth over the meat evenly.
- Allow to cool slightly, then refrigerate for at least 4 hours, or until set.
- Serve chilled, garnished with parsley and a splash of vinegar.
