Pickapeppa Sauce, often referred to as the “Jamaican ketchup,” is a versatile condiment that has been cherished in the Caribbean and beyond for over 90 years. Originally crafted in the cool hills of Mandeville, Jamaica, this sauce boasts a rich blend of sweet, sour, and spicy flavors, making it a favorite addition to meats, seafood, and even cheeses. Its unique taste comes from a medley of tomatoes, cane vinegar, onions, mangoes, raisins, and peppers, all matured to perfection over a period of time for an unmatched depth of flavor.
Ingredients
- Tomatoes – 2 lbs / 900 g
- Onions – 1 cup / 150 g, chopped
- Mangoes – 1 cup / 165 g, peeled and diced
- Raisins – 1/2 cup / 75 g
- Garlic – 4 cloves, minced
- Scotch Bonnet Peppers – 2, deseeded and chopped
- Cane Vinegar – 1 cup / 240 ml
- Brown Sugar – 1/2 cup / 110 g
- Thyme – 1 tsp / 1 g, dried
- Cloves – 1/2 tsp / 1 g, ground
- All-Spice – 1/2 tsp / 1 g, ground
- Salt – 1 tsp / 5 g
Instructions
- In a large pot, combine tomatoes, onions, mangoes, raisins, and garlic.
- Add chopped scotch bonnet peppers, cane vinegar, and brown sugar to the pot.
- Stir in thyme, ground cloves, ground all-spice, and salt.
- Bring the mixture to a boil, then reduce the heat and let it simmer uncovered for 1 hour.
- Transfer the mixture to a blender or use an immersion blender to blend until smooth.
- Return to the pot and simmer for another 30 minutes until thickened.
- Allow the sauce to cool before transferring it to sterilized bottles.
- Seal and store in a cool, dark place for at least 2 weeks to enhance flavors.
