Ingredients

  • Pici pasta – 400 g / 14 oz
  • Olive oil – 3 tbsp / 45 ml
  • Garlic cloves, thinly sliced – 3 cloves
  • Breadcrumbs – 100 g / 1 cup
  • Red chili flakes – 1/2 tsp
  • Salt – to taste
  • Freshly ground black pepper – to taste
  • Parsley, chopped – 2 tbsp / 8 g

Instructions

  1. Cook the Pici pasta in a large pot of salted boiling water until al dente, about 20 minutes.
  2. While the pasta is cooking, heat olive oil in a large skillet over medium heat.
  3. Add the garlic slices and red chili flakes, sauté until the garlic is golden and fragrant.
  4. Add the breadcrumbs to the skillet, stirring frequently until they are crisp and golden brown, approximately 5 minutes.
  5. Season the breadcrumb mixture with salt and pepper.
  6. Drain the pasta, reserving a cup of pasta water, and add the pasta to the skillet with the breadcrumbs.
  7. Toss the pasta and breadcrumbs together, adding reserved pasta water as needed to help coat the pasta and create a silky texture.
  8. Garnish with chopped parsley before serving.
