Petulla are delightful, deep-fried pastries hailing from Albania, enjoyed by families for generations. They are traditionally served with a variety of toppings such as powdered sugar, jams, or honey, making them a versatile favorite.

Ingredients

  • all-purpose flour – 4 cups / 500 g
  • water – 1 1/2 cups / 360 ml
  • dry yeast – 2 teaspoons / 7 g
  • sugar – 2 tablespoons / 25 g
  • salt – 1 teaspoon / 5 g
  • vegetable oil (for frying) – 2 cups / 480 ml

Instructions

  1. In a large bowl, combine warm water and sugar, then sprinkle dry yeast over the top. Let sit for 5 minutes until frothy.
  2. Add flour and salt to the yeast mixture. Stir until a sticky dough forms.
  3. Cover the bowl with a damp cloth and let the dough rise in a warm place for 1 to 2 hours, until doubled in size.
  4. Heat the oil in a large pot over medium heat until hot, about 350°F (175°C).
  5. Using floured hands, pinch off small pieces of dough and gently shape them into rounds.
  6. Carefully drop the dough rounds into the hot oil, frying until golden brown on both sides, about 2-3 minutes per side.
  7. Remove the Petulla with a slotted spoon and drain them on paper towels.
  8. Serve warm with powdered sugar, jam, or honey as desired.
