Ingredients

  • chicken, whole cut into pieces – 1.5 kg / 3.3 lbs
  • bird’s eye chili – 6 pieces / 10 g
  • red bell pepper, chopped – 1 cup / 150 g
  • garlic cloves, minced – 6 cloves / 30 g
  • lemon juice, freshly squeezed – 1/4 cup / 60 ml
  • olive oil – 1/4 cup / 60 ml
  • paprika – 2 tsp / 5 g
  • oregano, dried – 1 tsp / 2 g
  • salt – 1 tsp / 6 g
  • black pepper, ground – 1/2 tsp / 1 g

Instructions

  1. In a blender, combine chillies, bell pepper, garlic, lemon juice, olive oil, paprika, oregano, salt, and black pepper. Blend until smooth to form the peri peri sauce.
  2. Place chicken pieces in a large bowl and pour half of the sauce over them. Reserve the other half for basting.
  3. Massage the sauce into the chicken, ensuring complete coverage. Marinate in the refrigerator for at least 3 hours, preferably overnight.
  4. Preheat grill to medium-high heat. Cook the chicken, skin-side down first, basting occasionally with the reserved sauce, for about 15-20 minutes on each side, or until thoroughly cooked and slightly charred.
  5. Serve hot with any remaining sauce on the side.
