Pepper soup (pèpè soup) – Classic

Pepper Soup, known locally as Pèpè Soup, is a fiery and aromatic dish traditional to Cameroon. This vibrant soup reflects the rich cultural tapestry of its origins, marrying the intense heat of African spices with the comforting essence of a wholesome broth. Often served at festive gatherings and family dinners, Pepper Soup embodies a communal spirit and the warm hospitality characteristic of Cameroonian cuisine.
Ingredients
- Chicken – 1 kg / 2.2 lbs, cut into pieces
- Water – 1.5 liters / 6 cups
- Pepper Soup Spice Mix – 3 tbsp / 25 g
- Fresh Ginger – 2 tbsp, grated
- Garlic – 4 cloves, minced
- Onion – 1 large, diced
- Habanero Peppers – 2 whole, optional for extra heat
- Salt – 1 tsp / 5 g
- Bay Leaves – 2
- Fresh Basil – 1/2 cup / 30 g, chopped
- Fresh Parsley – 1/2 cup / 30 g, chopped
Instructions
- In a large pot, combine the chicken pieces and water. Bring to a boil over medium-high heat.
- Reduce to a simmer and skim off any foam that appears on the surface.
- Add the pepper soup spice mix, grated ginger, minced garlic, diced onion, and salt.
- Simmer on low heat for 30 minutes, allowing the flavors to meld with the chicken.
- Add the whole habanero peppers and bay leaves, and continue to simmer for an additional 15 minutes.
- Stir in the fresh basil and parsley, removing from heat after 5 minutes.
- Remove the habanero peppers if you prefer a milder soup.
- Serve hot, garnished with extra parsley if desired.

- Chicken -> Fish or Goat Meat
- Pepper Soup Spice Mix -> Homemade blend with peppercorns, cumin, and African nutmeg
- Habanero Peppers -> Scotch Bonnet Peppers or omit for less heat
