Pepián is a rich and flavorful Guatemalan stew that marries the robust flavors of Latin America with the aromatic spices of the Mayan tradition. It’s a dish deeply rooted in Guatemalan culture, often served at family gatherings and celebrations. The stew is noted for its deep, complex flavors, featuring a medley of vegetables, tender chicken, and a uniquely spiced, slightly thickened broth often highlighted with roasted spices and seeds.
Ingredients
- chicken thighs – 2 lbs / 900 g
- tomatoes – 3 large, chopped
- onion – 1 large, chopped
- garlic – 4 cloves, minced
- red bell pepper – 1 large, chopped
- green beans – 1 cup / 150 g, chopped
- carrots – 2 large, sliced
- potatoes – 2 medium, cubed
- poblano pepper – 1, roasted and peeled
- ground cinnamon – 1/2 tsp
- ground cumin – 1 tsp
- ground coriander – 1 tsp
- pumpkin seeds – 1/4 cup / 35 g, toasted
- sesame seeds – 1/4 cup / 35 g, toasted
- chicken stock – 4 cups / 960 ml
- cornstarch – 1 tbsp, mixed in water
- salt – to taste
- black pepper – to taste
- fresh cilantro – 1/4 cup / 15 g, chopped for garnish
Instructions
- In a large pot, heat a drizzle of oil over medium heat and brown the chicken thighs on all sides. Remove from the pot and set aside.
- In the same pot, add the onions, garlic, tomatoes, and red bell pepper. Cook until soft and fragrant.
- Add the cumin, coriander, and cinnamon. Stir to coat the vegetables with the spices.
- Return the chicken to the pot and add the chopped carrots, potatoes, green beans, and poblano pepper.
- Pour in the chicken stock, bring to a gentle boil, then reduce heat and cover. Let it simmer for 30-40 minutes until the chicken and vegetables are tender.
- In a blender, blend the toasted pumpkin and sesame seeds with a bit of broth until smooth. Stir this mixture back into the pot.
- Mix the cornstarch with a small amount of water and add to the pot to thicken the stew slightly. Season with salt and pepper.
- Simmer for another 10 minutes. Garnish with fresh cilantro before serving.
