Ingredients
- tofu – 400 g / 14 oz
- banana leaves – sufficient for wrapping
- red chilies – 3 pieces
- shallots – 5 pieces
- garlic – 3 cloves
- candlenuts – 3 pieces
- lemongrass – 1 stalk, white part only
- kaffir lime leaves – 2 leaves
- coconut milk – 100 ml / 3.4 fl oz
- salt – 1 tsp
- sugar – 1 tsp
- vegetable oil – 2 tbsp
Instructions
- Prepare the spice paste by blending red chilies, shallots, garlic, candlenuts, lemongrass, and kaffir lime leaves until smooth.
- In a skillet, heat oil over medium heat. Add the spice paste and sauté until fragrant, about 2-3 minutes.
- Crumble the tofu into a mixing bowl and add the sautéed spice paste, coconut milk, salt, and sugar. Mix well.
- Cut the banana leaves into rectangular pieces. Place a portion of the tofu mixture in the center of each leaf.
- Fold the banana leaf to enclose the filling completely, securing the edges with toothpicks.
- Steam the wrapped tofu parcels for 25-30 minutes until the flavors meld together beautifully.
- Unwrap and serve warm, enjoying the fragrant aroma and layered flavors of the dish.
