Ingredients

  • Russet potatoes – 1 kg / 2.2 lbs
  • Olive oil – 1/4 cup / 60 ml
  • Garlic cloves – 2, minced
  • Onion – 1 medium, finely chopped
  • Smoked paprika – 1 tsp / 2 g
  • Cayenne pepper – 1/2 tsp / 1 g
  • Canned tomatoes – 400 g / 14 oz, diced
  • Salt – to taste
  • Black pepper – to taste
  • Optional: Aioli – as desired

Instructions

  1. Peel and cut the potatoes into 2.5 cm (1 inch) cubes.
  2. Heat olive oil in a large frying pan over medium heat. Add potatoes and fry until golden and crispy, about 25-30 minutes. Stir occasionally to ensure even cooking.
  3. Meanwhile, in a saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and chopped onion, sauté until soft and translucent.
  4. Add smoked paprika and cayenne pepper to the saucepan, and stir for 1 minute until fragrant.
  5. Stir in the diced canned tomatoes. Season with salt and black pepper. Simmer for 10-15 minutes until the sauce thickens.
  6. Once the potatoes are cooked, remove them from the oil and drain on a paper towel-lined plate.
  7. Serve the potatoes hot, topped generously with the spicy tomato sauce and a drizzle of aioli if desired.
