Ingredients
- Russet potatoes – 1 kg / 2.2 lbs
- Olive oil – 1/4 cup / 60 ml
- Garlic cloves – 2, minced
- Onion – 1 medium, finely chopped
- Smoked paprika – 1 tsp / 2 g
- Cayenne pepper – 1/2 tsp / 1 g
- Canned tomatoes – 400 g / 14 oz, diced
- Salt – to taste
- Black pepper – to taste
- Optional: Aioli – as desired
Instructions
- Peel and cut the potatoes into 2.5 cm (1 inch) cubes.
- Heat olive oil in a large frying pan over medium heat. Add potatoes and fry until golden and crispy, about 25-30 minutes. Stir occasionally to ensure even cooking.
- Meanwhile, in a saucepan, heat a tablespoon of olive oil over medium heat. Add minced garlic and chopped onion, sauté until soft and translucent.
- Add smoked paprika and cayenne pepper to the saucepan, and stir for 1 minute until fragrant.
- Stir in the diced canned tomatoes. Season with salt and black pepper. Simmer for 10-15 minutes until the sauce thickens.
- Once the potatoes are cooked, remove them from the oil and drain on a paper towel-lined plate.
- Serve the potatoes hot, topped generously with the spicy tomato sauce and a drizzle of aioli if desired.
