Pan de Cruz de Ciudad Real is a distinctive bread from the heart of Spain, known for its cross imprint on top, symbolizing the historical Christian influence in the region. This rustic bread, with its perfect blend of a crunchy crust and soft crumb, is traditionally associated with the Castile-La Mancha area. It makes use of simple ingredients, yet delivers a symphony of flavors that are emblematic of authentic Spanish bread-making traditions.

  • bread flour – 4 cups / 500 g
  • active dry yeast – 2 1/4 tsp / 7 g
  • water – 1 1/4 cups / 300 ml
  • olive oil – 2 tbsp / 30 ml
  • salt – 1 1/2 tsp / 8 g

Instructions

  1. Dissolve yeast in warm water and let it sit until foamy, about 5 minutes.
  2. In a large bowl, combine flour and salt. Make a well in the center and add the yeast mixture and olive oil.
  3. Mix until a dough forms, then knead on a floured surface for 10 minutes until smooth and elastic.
  4. Place the dough in a greased bowl, cover with a damp cloth, and let it rise for 1 hour or until doubled in size.
  5. Preheat the oven to 450°F (230°C).
  6. Punch down the dough and shape into a round loaf. Place on a baking sheet lined with parchment paper.
  7. Cut a cross shape into the top of the dough and let it rise again for 30 minutes.
  8. Bake for 30-35 minutes until golden brown and sounds hollow when tapped on the bottom.
  9. Cool on a wire rack before slicing.
