Ingredients

  • sweet potatoes – 2 cups / 450 g, mashed
  • all-purpose flour – 3 cups / 360 g
  • sugar – 1 cup / 200 g
  • eggs – 3 large
  • unsalted butter – 1/2 cup / 115 g, melted
  • milk – 1/2 cup / 120 ml
  • vanilla extract – 1 tsp
  • baking powder – 2 tsp
  • ground cinnamon – 1 tsp
  • salt – 1/2 tsp

Instructions

  1. Preheat the oven to 350°F (175°C) and grease a loaf pan.
  2. In a large bowl, combine the mashed sweet potatoes, sugar, eggs, melted butter, milk, and vanilla extract; mix until smooth.
  3. In another bowl, sift together the flour, baking powder, cinnamon, and salt.
  4. Gradually add the dry ingredients to the wet ingredients, stirring until just combined.
  5. Pour the batter into the prepared loaf pan and smooth the top with a spatula.
  6. Bake for 50-60 minutes or until a toothpick inserted into the center comes out clean.
  7. Cool the bread in the pan for 10 minutes, then transfer to a wire rack to cool completely.
