Palmiers, also known as ‘Elephant Ears’, are a classic and elegant French pastry. Originating from France, these pastries have become a staple in French patisserie shops worldwide. They are known for their crispy, flaky texture and delicate sweetness. Made from puff pastry generously sprinkled with sugar, Palmiers offer a delightful contrast of caramelized exterior and buttery interior, often enjoyed alongside coffee or as a sweet snack.
Ingredients
- puff pastry – 1 sheet / 250 g
- granulated sugar – 1/2 cup / 100 g
Instructions
- Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Roll out the puff pastry on a lightly floured surface to smooth out any creases.
- Sprinkle the sugar evenly over the entire surface of the pastry.
- Fold the long sides of the dough towards the center, folding them once more so that they meet in the middle.
- Fold one half over the other like closing a book.
- Slice the dough into 1/4-inch (5 mm) pieces and place them cut side up on the baking sheet.
- Bake for 12-15 minutes or until the edges are caramelized and golden brown. Flip them halfway through the baking process.
- Allow them to cool for a few minutes before serving.
Substitutions
- puff pastry -> phyllo dough (though it will yield a different texture)
- granulated sugar -> brown sugar for a deeper flavor
