Ingredients

  • whole wheat flour – 2 cups / 240 g
  • bran – 1 cup / 60 g
  • all-purpose flour – 1 cup / 120 g
  • instant yeast – 1 packet / 7 g
  • warm water – 1 1/2 cups / 360 ml
  • honey – 2 tbsp / 30 ml
  • salt – 1 1/2 tsp / 9 g

Instructions

  1. In a large mixing bowl, whisk together whole wheat flour, bran, all-purpose flour, and salt.
  2. Dissolve honey in warm water and sprinkle yeast over the water. Let sit for about 5 minutes until bubbles form.
  3. Pour the yeast mixture into the dry ingredients and mix until it forms a shaggy dough.
  4. Knead the dough on a floured surface for about 10 minutes until smooth and elastic.
  5. Place the dough in a greased bowl, cover with a damp cloth, and let rise for 1-1.5 hours or until doubled in size.
  6. Preheat your oven to 425°F (220°C).
  7. Punch down the dough and shape it into a round loaf. Place it on a baking sheet lined with parchment paper.
  8. Let the loaf rise again for about 30 minutes until puffy.
  9. Bake in the preheated oven for 30-35 minutes or until golden brown and hollow sounding when tapped on the bottom.
  10. Cool on a wire rack before slicing.
