Oshi Palov – Classic

Oshi Palov, also known as Uzbek Pilaf, is the heartwarming and emblematic dish of Uzbekistan. Rich in history, this dish is a celebration of the region’s bountiful harvests and stands as a symbol of hospitality and celebration. Traditionally cooked over an open flame in a kazan, Oshi Palov is distinguished by its fragrant mix of rice, tender meat, and a colorful array of vegetables and spices.
Ingredients
- Basmati rice – 3 cups / 570 g
- Lamb shoulder, diced – 1.5 lbs / 680 g
- Carrots, julienned – 3 large / 300 g
- Onions, sliced – 2 large / 200 g
- Garlic cloves, whole – 6 cloves
- Cumin seeds – 1 tbsp
- Coriander seeds – 1 tbsp
- Vegetable oil – 1/4 cup / 60 ml
- Salt – 1 tbsp
- Water – 4 cups / 960 ml
Instructions
- Rinse the rice in cold water until the water runs clear, then soak it for 30 minutes. Drain and set aside.
- Heat the vegetable oil in a large pot over medium-high heat. Add the lamb pieces and brown them thoroughly.
- Add the sliced onions and sauté until they become translucent.
- Stir in the julienned carrots, cooking until they begin to soften.
- Add the cumin and coriander seeds, allowing them to release their aroma.
- Place the whole garlic cloves into the mixture.
- Add water and salt. Stir to combine and bring to a simmer.
- Arrange the rice evenly over the meat and vegetable mixture. Do not stir.
- Cover the pot and reduce heat to low, cooking for 20-25 minutes until the rice absorbs the liquid.
- Once cooked, fluff the rice gently with a fork, mixing it with the meat and vegetables.

- Lamb shoulder -> Beef or chicken
- Basmati rice -> Jasmine rice
- Vegetable oil -> Olive oil
