Ingredients
- Yakibosa noodles – 1 lb / 450 g
- Pork belly slices – 200 g / 7 oz
- Cabbage – 200 g / 7 oz, thinly sliced
- Carrots – 1 medium, julienned
- Onion – 1 medium, sliced
- Green onions – 2 stalks, chopped
- Soba sauce – 4 tbsp
- Ketchup – 2 tbsp
- Soy sauce – 1 tbsp
- Vegetable oil – 2 tbsp
- Eggs – 4, beaten
- Salt – to taste
- Pepper – to taste
Instructions
- Prepare the yakibosa noodles according to package instructions.
- Heat half of the vegetable oil in a large pan and add the pork belly slices. Cook until browned and crispy.
- Add the sliced onion, cabbage, and carrots to the pan. Stir-fry until the vegetables are tender.
- Incorporate the soba sauce, ketchup, and soy sauce. Stir well to combine.
- Add the cooked noodles and green onions, tossing them together to ensure even coating with the sauce.
- Season with salt and pepper to taste.
- In a separate non-stick pan, heat the remaining oil and pour in the beaten eggs, cooking until just set to form an omelette.
- Place a portion of the noodle mixture onto one half of the omelette and fold the other half over the noodles.
- Slide the omusoba onto a serving plate and repeat for the remaining servings.
