Ingredients

- salt – 1 tsp
- black pepper – 1/2 tsp
Instructions
- Wash okra thoroughly and trim the ends. Cut each piece into 1/2-inch rounds.
- Bring a pot of water to a boil, add a pinch of salt, and blanch okra for 3-4 minutes until just tender. Drain and set aside to cool.
- In a large mixing bowl, combine the okra, red onion, red bell pepper, tomato, and cilantro.
- In a small bowl, whisk together the lime juice, olive oil, salt, and black pepper.
- Pour the dressing over the salad ingredients and toss gently to combine.
