Obara is a traditional Slovenian stew, deeply rooted in the country’s culinary heritage. Ingredients
- Chicken thighs – 1 kg
- Onion, chopped – 1 large / about 200 g
- Carrots, sliced – 3 medium / 150 g
- Potatoes, diced – 2 medium / 300 g
- Garlic cloves, minced – 3
- Bay leaves – 2
- Paprika – 1 tsp
- All-purpose flour – 2 tbsp
- Chicken stock – 1 liter
- Salt – to taste
- Black pepper – to taste
- Parsley, chopped – for garnish
Instructions
- Season the chicken thighs with salt and black pepper.
- In a large pot, heat a bit of oil over medium heat. Brown the chicken thighs on both sides. Remove the chicken and set aside.
- In the same pot, add more oil if needed and sauté the chopped onions, garlic, and carrots until the onions become translucent.
- Stir in the flour and paprika, cooking for another minute to get rid of the raw flour taste.
- Return the chicken to the pot, then add the diced potatoes and bay leaves.
- Pour in the chicken stock and bring to a simmer. Cover and let it cook for about 45 minutes or until the chicken is tender and the potatoes are soft.
- Adjust the seasoning with salt and pepper, then garnish with fresh parsley before serving.
