Obara is a traditional Slovenian stew, deeply rooted in the country’s culinary heritage. Ingredients

  • Chicken thighs – 1 kg
  • Onion, chopped – 1 large / about 200 g
  • Carrots, sliced – 3 medium / 150 g
  • Potatoes, diced – 2 medium / 300 g
  • Garlic cloves, minced – 3
  • Bay leaves – 2
  • Paprika – 1 tsp
  • All-purpose flour – 2 tbsp
  • Chicken stock – 1 liter
  • Salt – to taste
  • Black pepper – to taste
  • Parsley, chopped – for garnish

Instructions

  1. Season the chicken thighs with salt and black pepper.
  2. In a large pot, heat a bit of oil over medium heat. Brown the chicken thighs on both sides. Remove the chicken and set aside.
  3. In the same pot, add more oil if needed and sauté the chopped onions, garlic, and carrots until the onions become translucent.
  4. Stir in the flour and paprika, cooking for another minute to get rid of the raw flour taste.
  5. Return the chicken to the pot, then add the diced potatoes and bay leaves.
  6. Pour in the chicken stock and bring to a simmer. Cover and let it cook for about 45 minutes or until the chicken is tender and the potatoes are soft.
  7. Adjust the seasoning with salt and pepper, then garnish with fresh parsley before serving.
