Ingredients
- Jasmine rice – 2 cups / 400 g
- Fresh corn kernels – 1 cup / 175 g
- Coconut milk – 1 cup / 240 ml
- Water – 2 cups / 480 ml
- Salt – 1 tsp / 5 g
- Pandan leaves – 2 leaves
- Shallots – 2, thinly sliced
- Vegetable oil – 2 tbsp / 30 ml
Instructions
- Rinse the jasmine rice under running water until the water runs clear. Drain well.
- In a large saucepan, heat the vegetable oil over medium heat and sauté the shallots until golden brown.
- Add the rinsed rice to the pan, stirring to coat the grains with the oil and shallot mixture.
- Stir in the fresh corn kernels, coconut milk, water, salt, and pandan leaves.
- Bring the mixture to a boil, then reduce the heat to low, cover, and simmer for 20-25 minutes until the rice is tender and the liquid has been absorbed.
- Once cooked, remove from the heat and let the rice sit, covered, for another 10 minutes to finish steaming.
- Fluff the rice with a fork before serving. Remove the pandan leaves prior to serving.
