Ingredients
- cooked jasmine rice – 4 cups / 800 g
- large eggs – 2

- garlic cloves – 3, minced
- red chili – 1, sliced
- shrimp paste – 1 teaspoon
- chicken breast – 200 g, thinly sliced
- soy sauce – 2 tablespoons
- sweet soy sauce (kecap manis) – 1 tablespoon
- vegetable oil – 2 tablespoons
- spring onions – 2, chopped
- cucumber – 1, sliced for garnish
- fried shallots – 2 tablespoons, for garnish
Instructions
- Heat vegetable oil in a large wok over medium-high heat.
- Add shallots, garlic, and red chili, stir-frying until fragrant.
- Push the ingredients to the side of the wok and add the eggs; scramble until fully cooked.
- Add chicken slices and shrimp paste, cooking until the chicken is no longer pink.
- Stir in the cooked rice, soy sauce, and sweet soy sauce.
- Stir-fry all ingredients together until well combined and heated through.
- Toss in chopped spring onions just before serving.
- Garnish with sliced cucumber and fried shallots.
