Ingredients

  • cooked jasmine rice – 4 cups / 800 g
  • large eggs – 2
  • shallots – 3, finely sliced
  • garlic cloves – 3, minced
  • red chili – 1, sliced
  • shrimp paste – 1 teaspoon
  • chicken breast – 200 g, thinly sliced
  • soy sauce – 2 tablespoons
  • sweet soy sauce (kecap manis) – 1 tablespoon
  • vegetable oil – 2 tablespoons
  • spring onions – 2, chopped
  • cucumber – 1, sliced for garnish
  • fried shallots – 2 tablespoons, for garnish

Instructions

  1. Heat vegetable oil in a large wok over medium-high heat.
  2. Add shallots, garlic, and red chili, stir-frying until fragrant.
  3. Push the ingredients to the side of the wok and add the eggs; scramble until fully cooked.
  4. Add chicken slices and shrimp paste, cooking until the chicken is no longer pink.
  5. Stir in the cooked rice, soy sauce, and sweet soy sauce.
  6. Stir-fry all ingredients together until well combined and heated through.
  7. Toss in chopped spring onions just before serving.
  8. Garnish with sliced cucumber and fried shallots.

  • shrimp paste -> fish sauce
  • chicken breast -> tofu cubes
  • sweet soy sauce (kecap manis) -> regular soy sauce mixed with sugar
