Ingredients

  • dried red chilies – 15 large
  • garlic – 10 cloves
  • shallots – 5 medium-sized
  • shrimp paste – 2 tablespoons
  • palm sugar – 1/4 cup / 50 g
  • tamarind paste – 3 tablespoons
  • fish sauce – 3 tablespoons
  • vegetable oil – 1/2 cup / 120 ml

Instructions

  1. Soak dried red chilies in warm water for 15 minutes, then drain.
  2. In a pan, add 1/4 cup of vegetable oil and over medium heat, roast the chilies until aromatic. Remove and set aside.
  3. In the same pan, add garlic, shallots, and roast until golden brown. Remove and set aside.
  4. Pound the roasted chilies, garlic, and shallots into a paste using a mortar and pestle.
  5. In another pan, add the remaining oil and melt the shrimp paste over medium heat.
  6. Add the pounded chili paste, stirring well. Then add palm sugar, tamarind paste, and fish sauce. Cook until well combined and aromatic.
  7. Adjust seasoning to taste. Let cool before storing.

  • palm sugar -> brown sugar
  • fish sauce -> soy sauce for a vegetarian option
