Ingredients
- fresh mussels, cleaned – 2 pounds / 907 g
- olive oil – 1/4 cup / 60 ml
- garlic cloves, minced – 4 cloves
- dry white wine – 1/2 cup / 120 ml
- lemon juice – 2 tablespoons / 30 ml
- fresh parsley, chopped – 1/4 cup / 15 g
- fresh dill, chopped – 1/4 cup / 15 g
- fresh thyme leaves – 1 tablespoon / 3 g
- salt – to taste
- black pepper – to taste
Instructions
- Clean the mussels thoroughly, removing any beards and discarding mussels that do not close when tapped.
- In a large pot, heat the olive oil over medium heat. Add the garlic and sauté until fragrant, about 1 minute.
- Add the mussels to the pot and stir to coat them in the garlic oil. Pour in the white wine and cover the pot.
- Cook the mussels for 3-5 minutes or until they have all opened, shaking the pot occasionally.
- Remove from heat and add lemon juice, parsley, dill, thyme, salt, and pepper. Stir to combine.
- Serve the mussels hot with crusty bread to soak up the flavorful broth.
