Ingredients

  • tràm mushrooms – 200 g
  • shrimp – 250 g, peeled and deveined
  • calamari – 150 g, cleaned and sliced
  • fish sauce – 3 tbsp / 45 ml
  • onion – 1 medium, sliced
  • ginger – 1-inch piece, sliced
  • scallions – 2 stalks, chopped
  • cilantro – 2 tbsp, chopped
  • vegetable stock – 1.5 liters
  • salt – to taste
  • black pepper – to taste

Instructions

  1. In a large pot, heat a tablespoon of oil over medium heat.
  2. Add sliced onion and ginger, sauté until fragrant and onions are translucent.
  3. Add tram mushrooms and cook for about 5 minutes until they release their aroma.
  4. Pour in the vegetable stock and bring to a boil.
  5. Add shrimp and calamari; cook until the seafood is just cooked through, about 3-4 minutes.
  6. Stir in fish sauce, salt, and pepper to taste.
