Ingredients
- tràm mushrooms – 200 g
- shrimp – 250 g, peeled and deveined
- calamari – 150 g, cleaned and sliced
- fish sauce – 3 tbsp / 45 ml
- onion – 1 medium, sliced
- ginger – 1-inch piece, sliced
- scallions – 2 stalks, chopped
- cilantro – 2 tbsp, chopped
- vegetable stock – 1.5 liters
- salt – to taste
- black pepper – to taste
Instructions
- In a large pot, heat a tablespoon of oil over medium heat.
- Add sliced onion and ginger, sauté until fragrant and onions are translucent.
- Add tram mushrooms and cook for about 5 minutes until they release their aroma.
- Pour in the vegetable stock and bring to a boil.
- Add shrimp and calamari; cook until the seafood is just cooked through, about 3-4 minutes.
- Stir in fish sauce, salt, and pepper to taste.
- Garnish with scallions and cilantro before serving warm.
