Ingredients
- white rice – 2 cups / 400 g
- water – 4 cups / 960 ml
- smooth peanut butter – 1/2 cup / 125 g
- salt – 1 teaspoon
- onion, finely chopped – 1 medium / 150 g
- oil (vegetable or olive) – 2 tablespoons / 30 ml
Instructions
- Rinse the rice under cold water until the water runs clear to remove excess starch.
- In a large pot, bring water to a boil. Add the rice and salt, then reduce heat to low, cover, and simmer for about 15-20 minutes or until the rice is cooked and water is absorbed.
- In a pan, heat oil over medium heat. Add the chopped onion and sauté until translucent.
- Lower the heat and add the peanut butter to the onions, stirring continuously until well combined and smooth.
- Once the rice is done, gently fold the peanut butter mixture into the rice until evenly distributed.
- Serve warm and enjoy the rich, nutty flavors of Mupunga Unedovi.
