Ingredients

  • whole fish (such as tilapia or mackerel) – 1.5 kg (3.3 lbs)
  • large onions – 2, finely chopped
  • bay leaves – 2
  • garlic cloves – 4, minced
  • ripe tomatoes – 3, diced
  • vegetable oil – 50 ml (3 tablespoons)
  • salt – to taste
  • black pepper – to taste
  • lime – 2, juiced
  • plantains – 4, peeled and boiled
  • sweet potatoes – 2, peeled and boiled
  • cassava – 500 g (1 lb), peeled and boiled
  • fresh parsley – a handful, chopped

Instructions

  1. Clean the whole fish and make diagonal cuts on both sides.
  2. In a bowl, mix minced garlic, salt, pepper, and lime juice. Rub this mixture all over the fish, ensuring it gets into the cuts. Let it marinate for 30 minutes.
  3. Heat vegetable oil in a large pan. Add chopped onions and bay leaves, sauté until onions are translucent.
  4. Add tomatoes and cook until soft.
  5. Preheat a grill to medium-high heat. Place the marinated fish on the grill and cook for about 10-12 minutes on each side, or until cooked through.
  6. Serve the grilled fish alongside boiled plantains, sweet potatoes, and cassava, topped with sautéed onions and tomatoes. Garnish with fresh parsley.
