Muamba nsusu is a traditional chicken stew from the Republic of the Congo, rich in flavors and history. Ingredients

  • chicken, cut into pieces – 1.5 kg / 3.3 lbs
  • palm oil or peanut oil – 1 cup / 240 ml
  • onions, finely chopped – 2 large / 300 g
  • tomatoes, peeled and chopped – 4 large / 600 g
  • garlic cloves, minced – 4
  • ginger, grated – 1 tablespoon / 15 g
  • okra, sliced – 250 g / 8.8 oz
  • bay leaves – 2
  • chili pepper, whole – 1
  • chicken bouillon cube – 1
  • salt – to taste
  • black pepper – to taste
  • water – 1 cup / 240 ml

Instructions

  1. Heat the palm oil in a large pot over medium heat. Add the chicken pieces and brown them on all sides. Remove the chicken and set aside.
  2. In the same pot, add the onions and sauté until golden brown. Stir in the garlic and ginger, cooking for another minute until aromatic.
  3. Add the tomatoes, okra, bay leaves, chili pepper, and bouillon cube. Stir well and cook for about 5 minutes until the tomatoes break down.
  4. Return the chicken to the pot and mix with the sauce. Season with salt and black pepper to taste.
  5. Pour in the water, bring the stew to a boil, then reduce the heat to low and cover the pot. Let it simmer for about 45 minutes, or until the chicken is fully cooked and tender.
  6. Remove and discard the bay leaves and chili pepper before serving.
