Millirahmstrudel, also known as milk-cream strudel, is a classic Austrian dessert that highlights the country’s rich tradition of pastries. Originating from Vienna, this strudel features a soft, creamy filling ensconced within delicate, handmade pastry layers. Its roots can be traced back to the imperial courts, where precision, elegance, and indulgence were paramount. This dessert is often enjoyed on festive occasions and is loved for its comforting vanilla-custard flavor profile.
Ingredients
- all-purpose flour – 2 cups / 240 g
- egg – 1 large, beaten
- water – 1/2 cup / 120 ml
- salt – 1/2 tsp
- butter – 4 tbsp / 60 g, melted
- milk – 2 cups / 480 ml
- heavy cream – 1 cup / 240 ml
- sugar – 1/2 cup / 100 g
- bread crumbs – 1 cup / 120 g
- raisins – 1/2 cup / 75 g
- vanilla extract – 2 tsp
- lemon zest – 1 tbsp
- cinnamon – 1 tsp
Instructions
- In a large bowl, mix flour and salt. Make a well in the center and add the beaten egg and water. Mix to form a dough.
- Knead the dough on a floured surface for 10 minutes until smooth. Cover with a damp cloth and let it rest for 30 minutes.
- In a saucepan, heat milk, heavy cream, sugar, raisins, and vanilla extract over medium heat until sugar dissolves. Stir occasionally.
- Remove from heat, add bread crumbs and lemon zest. Let it cool to room temperature to thicken.
- Roll out the dough on a floured cloth into a very thin rectangle, about 20×30 inches / 50×75 cm.
- Brush the sheet with melted butter, sprinkle with cinnamon.
- Spread the milk-cream mixture evenly over the dough, leaving a 1-inch / 2.5 cm border.
- Using the cloth, carefully roll the dough into a log. Seal the edges tightly.
- Place on a buttered baking dish and brush with melted butter.
- Bake at 375°F / 190°C for 30-35 minutes until golden brown.
- Allow to cool slightly before serving.
