Ingredients

  • Rice noodles – 400 g / 14 oz
  • Chicken breast – 300 g / 10.5 oz, thinly sliced
  • Soy sauce – 3 tbsp
  • Oyster sauce – 2 tbsp
  • Garlic – 4 cloves, minced
  • Carrot – 1, julienned
  • Bean sprouts – 150 g / 5 oz
  • Spring onions – 2, finely chopped
  • Vegetable oil – 2 tbsp
  • Lime – 1, cut into wedges
  • Fresh cilantro – A handful, chopped

Instructions

  1. Cook the rice noodles according to package instructions, drain and set aside.
  2. In a large pan, heat the vegetable oil over medium-high heat. Add minced garlic and sauté until fragrant.
  3. Add the sliced chicken breast to the pan and stir-fry until lightly golden.
  4. Stir in the soy sauce and oyster sauce, cooking until the chicken is well coated.
  5. Add the julienned carrot and continue to stir-fry for 2 minutes.
  6. Incorporate the cooked noodles, bean sprouts, and spring onions into the pan, tossing everything together for another 3-4 minutes.
  7. Serve the Mee Ketang hot, garnished with fresh cilantro and lime wedges.

  • Chicken breast -> Pork slices or tofu
  • Soy sauce -> Tamari or coconut aminos
  • Oyster sauce -> Hoisin sauce or soy paste
