Ingredients

  • beef stew meat – 2 lbs / 900 g
  • onion, chopped – 1 large / 150 g
  • garlic cloves, minced – 3 cloves
  • tomato paste – 2 tbsp / 30 g
  • beef stock – 2 cups / 480 ml
  • salt – 1 tsp / 5 g
  • black pepper – 1 tsp / 5 g
  • pap (cornmeal) – 2 cups / 320 g
  • water – 4 cups / 960 ml
  • vegetable oil – 2 tbsp / 30 ml

Instructions

  1. Heat the vegetable oil in a large pot over medium heat.
  2. Add the chopped onion and garlic, sautéing until softened and translucent.
  3. Add the beef stew meat to the pot, browning on all sides.
  4. Stir in the tomato paste, cooking for an additional 2 minutes.
  5. Pour in the beef stock, season with salt and black pepper, and bring to a simmer.
  6. Cover and reduce heat, letting the stew cook gently for about 1.5 hours, or until the meat is tender.
  7. For the pap, bring 4 cups of water to a boil in a separate pot.
  8. Gradually whisk in the cornmeal. Reduce heat to low, stirring continuously to prevent lumps.
  9. Cook the pap for about 10 minutes or until it thickens to a smooth consistency.
  10. Serve the beef stew hot alongside the pap, garnished with fresh herbs if desired.
