Ingredients

  • stale bread – 200 g / 7 oz
  • blanched almonds – 100 g / 3.5 oz
  • garlic – 2 cloves
  • extra virgin olive oil – 100 ml / 3.4 fl oz
  • sherry vinegar – 2 tbsp
  • water – 500 ml / 2 cups
  • salt – to taste
  • green apple (for garnishing) – 1, diced

Instructions

  1. Soak the stale bread in water for 10 minutes, then squeeze out excess moisture.
  2. In a blender, combine the soaked bread, blanched almonds, garlic, olive oil, and sherry vinegar. Blend until smooth.
  3. Gradually add water while blending to achieve a creamy, soup-like consistency. Season with salt to taste.
  4. Chill in the refrigerator for at least 1 hour to let the flavors meld.
  5. Serve cold, garnished with diced green apple.
