Mastawa is a traditional Afghan rice dish beloved for its comforting blend of flavors and nourishing ingredients. Originating from the cultural crossroads of Afghanistan, this dish harmoniously combines tender lamb, earthy lentils, fragrant rice, and tangy yogurt. Typically garnished with herbs and a dash of spices, Mastawa embodies the hearty, rustic cuisine of Afghanistan, makes it a staple meal across many Afghan homes.

Ingredients

  • lamb shoulder cubes – 500 g / 1.1 lbs
  • rice – 200 g / 1 cup
  • yellow split peas – 100 g / 1/2 cup
  • onion, finely chopped – 1 large / 150 g
  • plain yogurt – 240 ml / 1 cup
  • vegetable oil – 2 tbsp
  • garlic cloves, minced – 4 cloves
  • cumin seeds – 1 tsp
  • coriander seeds, crushed – 1 tsp
  • turmeric powder – 1/2 tsp
  • salt – to taste
  • black pepper – to taste
  • water – 1 liter / 4 cups
  • fresh cilantro, for garnish – a small bunch, chopped

Instructions

  1. Heat the vegetable oil in a large pot over medium heat and add the chopped onion. Sauté until golden brown.
  2. Add the minced garlic, cumin seeds, and coriander seeds to the pot, stirring for a minute until fragrant.
  3. Include the lamb cubes into the pot and brown the meat on all sides.
  4. Stir in the turmeric, salt, and black pepper, ensuring the lamb is well coated in spices.
  5. Pour in the water, cover, and let simmer for about 45 minutes or until the lamb is tender.
  6. Add the yellow split peas and continue to cook for another 10 minutes.
  7. Rinse the rice under cold water until the water runs clear, then add it to the pot.
  8. Cook until the rice and peas are tender, approximately 20 minutes.
  9. Stir in the yogurt gently and allow the mixture to heat through without boiling.
  10. Check seasoning and adjust with more salt and pepper as required.
  11. Garnish with fresh chopped cilantro before serving.
