Marubini is a traditional pasta dish hailing from the region of Lombardy in northern Italy. Ingredients

- Ground pork – 1/2 lb / 225 g
- Ground beef – 1/2 lb / 225 g
- Salt – 2 tsp
- Black pepper – 1 tsp
- Nutmeg – 1/4 tsp
- Chicken broth – 4 cups / 960 ml
- Olive oil – 1 tbsp
- Onion, finely chopped – 1 medium
- Garlic, minced – 2 cloves
Instructions
- In a large bowl, combine flour with a pinch of salt. Make a well in the center and crack in the eggs. Mix with a fork, then knead into a dough. Wrap in plastic and let rest for 30 minutes.
- While the dough rests, heat olive oil in a pan over medium heat. Add onion and garlic, sauté until translucent.
- Add ground pork and beef. Season with salt, pepper, and nutmeg. Cook until browned. Let cool slightly.
- In a bowl, mix ricotta and Parmesan with the cooled meat mixture.
- Roll out the dough thinly on a floured surface and cut into squares of about 3 inches.
- Place a tablespoon of filling onto each square, fold over and seal the edges to form a pasta shape.
- Bring chicken broth to a gentle boil in a large pot. Add the marubini and cook for 5-7 minutes until pasta is tender.
- Serve the marubini in bowls with some of the broth.
