Ingredients

  • goat head and feet – 2 lbs / 900 g
  • pumpkin – 1 cup / 130 g, diced
  • green bananas – 2, sliced
  • carrots – 2, diced
  • yellow yam – 1 cup / 150 g, diced
  • scotch bonnet pepper – 1, whole
  • thyme – 3 sprigs
  • pimento seeds – 1 tsp / 5 g
  • garlic – 3 cloves, crushed
  • onion – 1 large, chopped
  • scallions – 2, chopped
  • salt – to taste

Instructions

  1. Clean the goat head and feet thoroughly, removing any excess hair and skin.
  2. Place the goat meat in a large pot, cover with water, and bring to a boil.
  3. Reduce the heat and simmer for 1 to 1.5 hours until the meat is tender.
  4. Add pumpkin, green bananas, carrots, and yellow yam to the pot.
  5. Tie the thyme sprigs together and add to the soup along with the scotch bonnet pepper, garlic, pimento seeds, onion, and scallions.
  6. Simmer for another 30-45 minutes until the vegetables are cooked through and the soup is thickened.
  7. Season with salt to taste, and adjust the spiciness by removing the scotch bonnet pepper early if necessary.
  8. Serve hot, garnished with additional chopped scallions if desired.
