Ingredients

  • fresh tilapia – 2 lbs / 900 g
  • banana leaves – 4 large leaves
  • tomatoes – 2 large, chopped
  • onion – 1 large, diced
  • green bell pepper – 1, chopped
  • garlic cloves – 3, minced
  • ginger root – 1 inch / 2.5 cm piece, grated
  • palm oil – 2 tbsp / 30 ml
  • lemon juice – 2 tbsp / 30 ml
  • salt – 1 tsp / 5 g
  • black pepper – 1/2 tsp / 2 g
  • cayenne pepper – 1/4 tsp / 1 g

Instructions

  1. Rinse the tilapia and pat dry. Cut into serving pieces.
  2. In a bowl, mix the tomatoes, onion, bell pepper, garlic, ginger, palm oil, lemon juice, salt, black pepper, and cayenne pepper.
  3. Place banana leaves on a flat surface and put pieces of tilapia on each leaf.
  4. Top the fish with the vegetable mixture and gently fold the banana leaves to encase the fish completely.
  5. Secure the banana leaf pouches with kitchen twine if necessary.
  6. Grill over medium heat or bake in a preheated oven at 350°F (175°C) for about 25-30 minutes.
  7. Serve with steamed rice or plantains.
