Ingredients

  • pork loin – 1 piece (2 lbs / 900 g)
  • olive oil – 2 tbsp / 30 ml
  • garlic cloves, minced – 3 cloves
  • onion, finely chopped – 1 medium
  • red bell pepper, diced – 1 medium
  • green olives, chopped – 1/2 cup / 120 g
  • capers – 2 tbsp / 30 g
  • raisins – 1/4 cup / 40 g
  • fresh parsley, chopped – 1/4 cup / 15 g
  • salt – to taste
  • black pepper – to taste
  • white wine – 1/2 cup / 120 ml

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Butterfly the pork loin by cutting it almost in half horizontally, then opening it like a book.
  3. In a pan, heat olive oil over medium heat and sauté the garlic, onion, and bell pepper until softened.
  4. Stir in the olives, capers, raisins, and parsley. Cook for an additional 3 minutes.
  5. Spread the vegetable mixture over the opened pork loin, then roll it up and secure with kitchen twine.
  6. Season the outside of the pork with salt and black pepper.
  7. Place in a baking dish, pour white wine over it, and cover with foil.
  8. Bake for 45-50 minutes, removing the foil in the last 15 minutes to brown the top.
  9. Let the pork rest for at least 10 minutes before slicing.
