Ingredients
- lamb shoulder – 4 lbs / 1.8 kg
- potatoes – 2 lbs / 900 g

- olive oil – 3 tbsp / 45 ml
- rosemary – 2 sprigs
- bay leaves – 2 leaves
- salt – 2 tsp / 10 g
- black pepper – 1 tsp / 5 g
- white wine – 1 cup / 240 ml
Instructions
- Preheat an outdoor grill or oven to 400°F (200°C).
- Cut the lamb shoulder into large chunks and season with salt and black pepper.
- Peel and cut the potatoes and carrots into wedges. Slice the onions and slightly crush the garlic cloves.
- In a large baking dish, toss the vegetables with olive oil, rosemary, and bay leaves.
- Place the lamb chunks on top of the vegetable mixture. Pour the white wine over everything.
- Cover the dish with a lid or aluminum foil, sealing the edges tightly.
- Place in the oven or under an outdoor grill, cooking for 2.5 to 3 hours, until the lamb is tender and the potatoes are golden brown.
- Remove the lid for the last 20 minutes to allow the lamb to roast slightly, building a delicious crust.
