Laab, also known as Larb, is a traditional Lao meat salad considered the unofficial national dish of Laos. Known for its vibrant flavors and aromatic fragrance, this dish brings the true essence of Southeast Asian cuisine to your table. The name ‘Laab’ refers to a seasoning technique that combines ground meat with an intricate medley of fish sauce, lime juice, fresh herbs, and ground toasted rice, creating a harmonious blend of savory, tangy, and spicy notes. Typically made with pork, chicken, or beef, this complex dish is cherished for both its texture and delectable taste, often enjoyed during celebrations and gatherings.

Ingredients

  • Ground pork – 500 g / 1.1 lbs
  • Fish sauce – 2 tablespoons
  • Lime juice – 3 tablespoons
  • Chili flakes – 1 tablespoon
  • Shallots, thinly sliced – 3
  • Mint leaves – 1/2 cup / 10 g
  • Coriander leaves – 1/2 cup / 10 g
  • Green onions, sliced – 3
  • Kaffir lime leaves, thinly sliced – 3
  • Roasted rice powder – 2 tablespoons
  • Salt – 1/2 teaspoon
  • Sugar – 1 teaspoon
  • Lettuce leaves – for serving

Instructions

  1. In a skillet over medium heat, cook the ground pork until no longer pink, breaking it up with a spoon.
  2. Remove from heat, and drain any excess fat.
  3. In a large mixing bowl, combine cooked pork, fish sauce, lime juice, chili flakes, shallots, mint leaves, coriander leaves, green onions, and kaffir lime leaves.
  4. Add roasted rice powder, salt, and sugar. Mix thoroughly until all ingredients are well incorporated.
  5. Adjust seasoning to taste, adding more lime juice or fish sauce as desired.
  6. Serve with lettuce leaves to wrap the laab, or alongside steamed rice.
