Steeped in history and tradition, La Bandera Dominicana is more than a meal; it’s a daily staple in Dominican households, showcasing the country’s rich agricultural bounty and culinary diversity.

Ingredients

  • white rice – 2 cups / 360 g
  • water – 3 cups / 720 ml
  • red kidney beans – 1 can / 400 g
  • olive oil – 2 tablespoons / 30 ml
  • onion, chopped – 1 medium / 150 g
  • green bell pepper, chopped – 1 / 120 g
  • garlic cloves, minced – 3
  • tomato paste – 2 tablespoons / 30 g
  • chicken thighs – 4 pieces / 500 g
  • lime juice – 2 tablespoons / 30 ml
  • oregano – 1 teaspoon / 1 g
  • salt – to taste
  • black pepper – to taste
  • fresh cilantro, chopped – for garnish

Instructions

  1. Rinse the rice under cold water until the water runs clear. In a pot, bring 3 cups of water to a boil, add a pinch of salt, and then stir in the rice. Cover and reduce heat to low, cooking for 18 minutes or until water is absorbed.
  2. In another pan, heat 1 tablespoon of olive oil over medium heat. Sauté onion and green bell pepper until soft. Add garlic and cook for another 30 seconds.
  3. Stir in the tomato paste and cook for 2 minutes, adding the red kidney beans afterward. Season with salt and pepper to taste and let simmer for 10 minutes.
  4. Season chicken thighs with lime juice, oregano, salt, and black pepper. In a large skillet, heat the remaining olive oil and brown the chicken on both sides.
  5. Reduce heat, cover the skillet, and let the chicken cook through, about 25 minutes. Serve it alongside the rice and beans, garnished with fresh cilantro.
