- water – 3 cups / 720 ml
- red kidney beans – 1 can / 400 g
- olive oil – 2 tablespoons / 30 ml
- onion, chopped – 1 medium / 150 g
- green bell pepper, chopped – 1 / 120 g
- garlic cloves, minced – 3
- tomato paste – 2 tablespoons / 30 g

- lime juice – 2 tablespoons / 30 ml
- oregano – 1 teaspoon / 1 g
- salt – to taste
- black pepper – to taste

Instructions
- Rinse the rice under cold water until the water runs clear. In a pot, bring 3 cups of water to a boil, add a pinch of salt, and then stir in the rice. Cover and reduce heat to low, cooking for 18 minutes or until water is absorbed.
- In another pan, heat 1 tablespoon of olive oil over medium heat. Sauté onion and green bell pepper until soft. Add garlic and cook for another 30 seconds.
- Stir in the tomato paste and cook for 2 minutes, adding the red kidney beans afterward. Season with salt and pepper to taste and let simmer for 10 minutes.
- Season chicken thighs with lime juice, oregano, salt, and black pepper. In a large skillet, heat the remaining olive oil and brown the chicken on both sides.
- Reduce heat, cover the skillet, and let the chicken cook through, about 25 minutes. Serve it alongside the rice and beans, garnished with fresh cilantro.
Substitutions
- chicken thighs -> pork chops
- red kidney beans -> black beans
Enhancements in the Next Evolution
- Add a marinade for the chicken, using lime juice, oregano, and garlic for enhanced flavor.
- Incorporate sofrito—a blend of onions, peppers, cilantro, and tomato sauce—into the bean mixture for added depth.
- Use fresh, diced tomatoes instead of tomato paste for a fresher taste.
