Ingredients

  • lamb shoulder – 1.5 lbs / 680 g
  • onion – 1 large, finely chopped
  • garlic – 4 cloves, minced
  • berbere spice – 2 tbsp
  • clarified butter (niter kibbeh) – 3 tbsp
  • tomato paste – 2 tbsp
  • water – 1 cup / 240 ml
  • salt – to taste
  • fresh cilantro – a handful, chopped

Instructions

  1. Heat the clarified butter in a large pan over medium heat.
  2. Add the onion and garlic, sauté until the onion is translucent.
  3. Stir in the berbere spice and cook for 2 minutes to release its aromas.
  4. Add the lamb pieces, cooking until browned on all sides.
  5. Mix in the tomato paste and water. Bring to a simmer and let cook for about 30 minutes or until the lamb is tender.
  6. Season with salt to taste.
  7. Garnish with fresh cilantro before serving.
