Ingredients
- lamb shoulder – 1.5 lbs / 680 g
- onion – 1 large, finely chopped
- garlic – 4 cloves, minced
- berbere spice – 2 tbsp
- clarified butter (niter kibbeh) – 3 tbsp
- tomato paste – 2 tbsp
- water – 1 cup / 240 ml
- salt – to taste
- fresh cilantro – a handful, chopped
Instructions
- Heat the clarified butter in a large pan over medium heat.
- Add the onion and garlic, sauté until the onion is translucent.
- Stir in the berbere spice and cook for 2 minutes to release its aromas.
- Add the lamb pieces, cooking until browned on all sides.
- Mix in the tomato paste and water. Bring to a simmer and let cook for about 30 minutes or until the lamb is tender.
- Season with salt to taste.
- Garnish with fresh cilantro before serving.
