Ingredients
- Potatoes – 1 kg / 2.2 lbs
- Smoked Sausage – 200 g / 7 oz
- Onion – 1 large, diced
- Garlic – 3 cloves, minced
- Paprika – 1 tbsp
- Carrots – 2 medium, sliced
- Celery – 2 stalks, diced
- Chicken or vegetable broth – 1.5 liters / 6 cups
- Bay leaves – 2
- Salt – to taste
- Pepper – to taste
- Fresh parsley – for garnish
Instructions
- Peel and dice the potatoes into small cubes.
- In a large pot, sauté diced onion in a little oil until translucent.
- Add minced garlic and stir for a minute until fragrant.
- Slice the smoked sausage and add it to the pot, cooking until browned.
- Sprinkle paprika and stir into the onion mixture to bloom the spice.
- Add the carrots, celery, and diced potatoes, stirring to coat with the paprika blend.
- Pour in the broth, add bay leaves, and bring to a boil.
- Reduce the heat to simmer and cook until potatoes are tender, about 25-30 minutes.
- Season with salt and pepper to taste.
