Krapfen – Classic

Krapfen, also known as Austrian doughnuts, are delightful round pastries filled with sweet apricot jam and dusted with powdered sugar. Originating from Austria, these pastries are a beloved treat during winter festivities and are commonly enjoyed during the carnival season before Lent. Their light, airy dough and rich, sweet filling make them a symbol of indulgence and celebration, perfect for sharing with family and friends.

Ingredients

  • flour – 4 cups / 480 g
  • milk – 1 cup / 240 ml
  • unsalted butter – 1/2 cup / 115 g
  • sugar – 1/4 cup / 50 g
  • eggs – 3 large
  • dry yeast – 2 1/4 tsp / 7 g
  • salt – 1 tsp
  • apricot jam – 1 cup / 250 g
  • powdered sugar – for dusting
  • vegetable oil – for frying

Instructions

  1. Warm the milk to lukewarm temperature and dissolve the yeast in it.
  2. In a large bowl, mix together the flour, sugar, and salt.
  3. Add the eggs, melted butter, and yeast mixture into the dry ingredients, mixing until a dough forms.
  4. Knead the dough on a floured surface until smooth and elastic, about 10 minutes.
  5. Place the dough in a greased bowl, cover, and let rise in a warm place until it doubles in size, about 1 to 2 hours.
  6. Roll out the dough to about 1 cm / 0.4 inch thickness and cut out circles of about 7 cm / 2.75 inches in diameter.
  7. Place a teaspoon of apricot jam in the center of half of the circles. Cover with the other half and seal the edges well.
  8. Allow the krapfen to rise again for about 30 minutes.
  9. Heat oil in a deep fryer or large pot to 350°F / 175°C.
  10. Fry the krapfen in batches until golden brown on both sides, about 3-4 minutes per side.
  11. Remove from oil and drain on paper towels. Dust with powdered sugar before serving.
