Kiritanpo is a classic and beloved rice dish from the Akita Prefecture in Japan. Originally intended as a filling and warming meal for chilly northern climates, this dish brings together the wholesome and comforting flavors of freshly harvested rice shaped into cylinders and grilled over an open flame. Traditionally cooked in a nabe hotpot and combined with a savory chicken and vegetable broth, Kiritanpo embodies the heartiness of Japanese countryside cuisine, providing a rich tapestry of flavors and textures that highlight the simplicity and depth of Japanese cooking.

Ingredients

  • short-grain Japanese rice – 2 cups / 400 g
  • water – 2 1/2 cups / 600 ml
  • chicken thigh – 400 g, boneless and skinless
  • burdock root – 50 g, thinly sliced
  • Japanese leek – 1, cut into 5 cm pieces
  • shiitake mushrooms – 4, stems removed
  • soy sauce – 60 ml / 4 tbsp
  • sake – 50 ml / 3 1/3 tbsp
  • mirin – 50 ml / 3 1/3 tbsp
  • dashi stock – 1 liter / 4 cups
  • salt – 1 tsp

Instructions

  1. Rinse the rice, then cook with water using a rice cooker until fluffy. Allow it to rest and cool slightly.
  2. Shape the warm rice into cylinders around skewers, compact tightly, and grill over an open flame or broil until golden brown. Remove skewers and set aside.
  3. In a pot, combine dashi stock, soy sauce, sake, mirin, and salt. Bring to a simmer.
  4. Add chicken thighs, burdock root, leeks, and shiitake mushrooms. Simmer until the chicken is cooked through.
  5. Gently add the grilled rice cylinders to the pot and let them soak up the broth flavors for a few minutes before serving.
