Ingredients
- jasmine rice – 1 cup / 185 g
- chicken stock – 6 cups / 1.5 liters
- fish sauce – 2 tablespoons / 30 ml
- soy sauce – 1 tablespoon / 15 ml
- minced pork – 200 g / 7 oz
- fresh ginger, sliced – 1 tablespoon / 15 g
- garlic cloves, minced – 3
- white pepper – 1/2 teaspoon / 1 g
- green onions, chopped – 2
- cilantro leaves – 1/4 cup / 10 g
- lime wedges – 4
Instructions
- Rinse jasmine rice under cold water until the water runs clear.
- Bring chicken stock to a gentle boil in a large pot.
- Add the rice to the stock, stirring occasionally, and let it simmer for 15-20 minutes or until rice is soft.
- Mix minced pork with soy sauce and a pinch of white pepper. Shape into small balls.
- Add ginger, garlic, and pork balls into the pot, and simmer until the pork is cooked through.
- Stir in fish sauce and adjust seasoning with more fish sauce or soy sauce to taste.
- Serve hot in bowls, garnished with chopped green onions and cilantro. Squeeze lime juice over before eating.
