- carrot (julienned) – 1 large
Instructions
- Cook the rice noodles according to the package instructions, then drain and set aside.
- Poach the fish fillets in boiling water until cooked. Remove from water, let cool slightly, then flake into bite-sized pieces.
- In a large pot, bring coconut milk to a gentle simmer over medium heat, then stir in the red curry paste, mixing well.
- Add fish sauce, palm sugar, and kaffir lime leaves to the pot, stirring to combine.
- Once the sauce is well mixed, add flaked fish and simmer for 5-10 minutes, allowing flavors to meld.
