Ingredients

  • beef chunks – 2 lbs / 900 g
  • vegetable oil – 2 tbsp / 30 ml
  • onion, chopped – 1 large / 150 g
  • garlic cloves, minced – 3 cloves
  • ginger, minced – 1 tbsp / 15 g
  • tomato paste – 2 tbsp / 30 g
  • ripe tomatoes, chopped – 3 medium / 400 g
  • carrots, sliced – 3 / 150 g
  • potatoes, cubed – 3 large / 450 g
  • green peas – 1 cup / 150 g
  • beef stock – 4 cups / 960 ml
  • coriander powder – 1 tsp / 2 g
  • cumin powder – 1 tsp / 2 g
  • curry powder – 1 tsp / 2 g
  • salt – to taste
  • black pepper – 1/2 tsp / 1 g
  • fresh coriander, chopped – 1/4 cup / 15 g

Instructions

  1. Heat vegetable oil in a large pot over medium heat. Add chopped onions and sauté until golden brown.
  2. Add minced garlic and ginger, cooking for another 2 minutes until fragrant.
  3. Stir in tomato paste, chopped tomatoes, coriander powder, cumin, and curry powder. Cook for 5 minutes until the tomatoes break down.
  4. Add beef chunks, stirring to coat with the spice mixture. Cook until the beef begins to brown, about 5-7 minutes.
  5. Pour in beef stock, then add carrots, potatoes, and peas. Season with salt and black pepper.
  6. Bring the stew to a boil, then reduce heat to low and simmer uncovered for 1.5 to 2 hours, or until the beef is tender and the stew has thickened.
  7. Garnish with fresh chopped coriander before serving.
