Kenyan Pilau is a fragrant and spiced rice dish hailing from the coastal regions of Kenya. Known for its rich blend of spices and hearty flavors, it is a staple at celebrations and family gatherings. Ingredients
- basmati rice – 2 cups / 400 g
- beef or goat meat, cubed – 500 g / 1 lb
- onion, sliced – 1 large
- garlic cloves, minced – 4 cloves
- ginger, grated – 1 inch / 2.5 cm piece
- tomatoes, chopped – 2 medium
- coconut milk – 1 cup / 240 ml
- vegetable oil – 3 tbsp
- cumin seeds – 1 tsp
- cardamom pods – 5 pods
- cloves – 5 whole
- cinnamon stick – 1
- black peppercorns – 1 tsp
- bay leaves – 2
- salt – to taste
- water – 3 cups / 720 ml
Instructions
- Rinse the basmati rice in cold water until the water runs clear, then soak for 30 minutes.
- Heat oil in a large pot over medium heat. Add cumin seeds, cardamom pods, cloves, cinnamon stick, bay leaves, and peppercorns. Sauté for 2 minutes until fragrant.
- Add sliced onions and sauté until golden brown, about 8-10 minutes.
- Stir in minced garlic and ginger, cooking for another 2 minutes.
- Add the cubed meat and brown on all sides.
- Mix in chopped tomatoes, cooking until they break down and form a sauce.
- Pour in the coconut milk and water, bringing to a boil. Season with salt.
- Drain the rice and add it to the pot. Stir well, cover, and reduce heat to low.
- Simmer for about 20-25 minutes or until the rice is cooked and the liquid absorbed.
- Fluff the rice with a fork before serving.
