Ingredients

  • glutinous rice – 3 cups / 600 g
  • coconut milk – 2 cups / 480 ml
  • banana leaves – 10 pieces, cut into 12-inch rectangles
  • salt – 1 tsp / 5 g
  • pandan leaves – 3 leaves, knotted
  • toothpicks – as needed

Instructions

  1. Rinse the glutinous rice under cold water until the water runs clear, then soak it for 4 hours.
  2. Drain the soaked rice and place it in a steamer lined with cheesecloth.
  3. Steam the rice for 30 minutes, ensuring it is cooked thoroughly.
  4. In a saucepan, mix the coconut milk, salt, and pandan leaves. Bring to a gentle simmer.
  5. Once the rice has steamed, transfer it to a large mixing bowl and gradually stir in the coconut milk mixture until fully absorbed.
  6. Prepare each banana leaf by softening it over an open flame until pliable.
  7. Place about 2 tablespoons of the rice mixture onto the banana leaf, roll it tightly, and secure both ends with toothpicks.
  8. Return the wrapped rice rolls to the steamer and steam for an additional 15 minutes.
  9. Serve warm.
