- Water – 2 cups / 480 ml
Instructions
- Cut the beef into bite-sized cubes.
- Peel and chop the potatoes into similar-sized pieces.
- Chop the tomatoes, onions, and bell pepper; mince the garlic.
- Heat the vegetable oil in a large pot over medium-high heat.
- Add the onions and sauté for 5 minutes until translucent.
- Add the beef to the pot, season with salt and black pepper, and cook until browned on all sides.
- Stir in the garlic, tomatoes, and red bell pepper, cooking for another 5 minutes.
- Add the potatoes and pour in water, bringing everything to a simmer.
- Cover the pot and cook for about 45 minutes, ensuring the meat is tender and the potatoes are cooked through.
- Sprinkle with ground coriander and adjust seasoning if necessary.
- Garnish with freshly chopped cilantro before serving.
